I have been on a fit kick lately. Trying to tone up and get my body into better shape has been quite the task. As mom’s we are last on the priority list. We cook, clean and take care of the kids. For me I also work on top of that. Brandon is a huge help thankfully, but we still don’t take care of ourselves like we should.
I lately have been following Whitneyysimmons on instagram. She has amazing fit tips, and meal plans. I have always loved Kodiak Cakes but she has helped me find a new love for them. Protein packed and easy to make for mornings I have to work. When you are trying to tone up and weight train protein is your best friend. These pancakes are my favorite for post workouts. They are packed with protein and help with muscle soreness after a work out. I love these pancakes. They are so easy to make. I can make them in 10 minutes.
You can also make mass amounts and refrigerate them for meal planning. You can top them with so many things. Use them instead of bread for a sandwich or bun. I am so thankful Costco sells these at an inexpensive price because we go through these boxes like there is no tomorrow. Aria loves them!
I like to get everything out and pre-measure before baking. It helps with time and cleanup. It also helps me make sure I have what I need. I have started baking before just to realize I don’t have enough sugar, or flour, or baking soda..and it really sucks! Smart people usually check that, but until now I wasn’t one of those people.
Because there are so many ingredients in this recipe..haha not. Mix the water and the Kodiak Protein Cakes mix. It needs to be smooth, and kind of thin. Nobody likes clumpy pancakes.
Throw them on the griddle. I like to oil my griddle with coconut oil. It helps boost metabolism, and it tastes amazing. Seriously coconut oil can be used for everything. The trick to perfectly golden pancakes is to flip the pancake when you see the top bubbling.
Top with Almond Butter and Bananas. I like to drizzle Agave on pretty much everything. It adds sweetness, and it’s natural. Yummy!
- 1 cup Kodiak Cakes Protein Mix
- 1 cup Water
- 1 Banana
- 2 Tblsp Almond Butter
- 2 Tblsp Agave (optional)
- Mix water and pancake mix
- Heat up griddle or pan
- Place pancakes on the griddle
- While pancakes are cooking start chopping up banana's
- After pancakes are fully cooked, spread almond butter on top.
- Top off pancakes with banana's and drizzle Agave over the top for some added sweetness
