Simple cakes are so chic and so on trend this year. You see them at so many weddings nowadays, and there really isn’t too much to them, but they don’t lack in appeal!
You can make these yourself for your wedding, a friends wedding, shower, birthday whatever occasion. It really doesn’t take a lot of cake mix, or cake batter.
I did a smaller 8″ 1 layer cake. It is simple, easy and decorating it can be as simple as adding a few flowers or sprinkles. Frozen sugar-coated berries look amazing on it as well.
Today I am using the Miss. Jones Baking Co. Vanilla Cake Mix. This can easily be a vegan cake just replace the eggs with egg replacements and the butter with coconut butter. I haven’t been to the store yet so I was not able to make this Vegan-friendly for myself. Miss Jones tastes like homemade and is made with 90% organic ingredients.
Follow the instructions on the box. Remember if you want a white cake and it calls for 3 eggs use only the whites to keep the cake white. Otherwise, your cake will get a yellow hue.
Supplies:
–Miss Jones Baking Co. Vanilla Cake Mix
– Egg Whites (Vegan Option HERE)
-Butter (Vegan Option HERE)
-Lemons
-Almond Milk
–Miss Jones Baking Co. Frosting
After mixing the batter, cook it per instructions.
Once the cakes are done, you should be able to insert a toothpick and pull it out clean without any batter on it.
Let the cakes cool, you can even wrap them in food-safe wrap and freeze the cake for later decorating.
After the cakes are cool you are going to want to level them if you are doing multiple layers, if you like the more rustic naked cake look skip the leveling unless you do more than 2 layers.
Now the fun part, frosting. This cake was super crumbly, but that really didn’t matter to me. It was a little hard to frost but the crumb coat and the simple look I was going for pulled it all together. You can see above that my cake was subject to toddler fingers. Aria snuck off with a chunk of cake.
You can make your own with my recipe {HERE} or use the Miss. Jones Baking Co. frosting like I am here. The Organic Confetti Pop Buttercream frosting is delicious and surprisingly fluffy for a store-bought frosting. I loathe store-bought frosting, but you can always liven it up with almond extract.
This frosting needed no additions it was the most delicious store-bought frosting I have ever had. Of course, I was “test tasting” it as I baked. Yum!
After you have frosted one layer, stack the top piece on upside down so it provides a flat top. So you have frosting between the cakes and now do a coat on the top. If you only do a one layer cake like I did, frost the whole cake in a crumb coat, refridgerate then add a top coat. You can add more to cover the cake but I went for the simple rustic look so I did two coats.
Let the frosting set, you can freeze it or place in the refrigerator overnight.
Now decorating. You can decorate it however you like. For weddings use flowers, berries, or a cute cake topper.
