I am so excited to share this amazing enchilada recipe with you today. It has been quite a long time since I have been able to enjoy this dish. I recently asked you guys on my instastories how you handle your occasional heartburn with sleeplessness because I have been dying for some spicy Mexican food, especially these enchiladas.
I had a few of you refer me to the Alka-Seltzer® PM Gummies. Pills are so hard for me to swallow so when you guys kept telling me about the Alka-Seltzer® PM Gummies I knew I had to give it a try. Not only was I able to enjoy my spicy enchiladas, I was able to sleep in peace without feeling like my chest was on fire.
I absolutely recommend these to my family members who also struggle with occasional heartburn and sleeplessness. We all seem to love spicy foods, but always feel the after-effects of them. You better believe I will have a bottle for every member’s household so we all can enjoy our spicy dinners again!
After asking you guys what you do to relieve your occasional heartburn I got so many helpful tips I want to pass on to everyone. These all work hand in hand with the Alka-Seltzer® PM Gummies. You can grab them at Walmart while you get all your ingredients for your enchiladas.
- Drink a glass of almond milk before the meal.
- Take a hot shower with peppermint oil.
- Use a rice bag on your chest for some relief.
- Drink Cucumber water.
- Drink almond milk after the meal.
- Eat a bowl of popcorn before bed. (Just plain so no salt or butter).
Now that you have all the tips and tricks necessary for your occasional heartburn worries with sleeplessness, let’s get on to the delicious spicy enchilada recipe!
These have to be one of my favorite dishes ever. They are easy to make, delicious and you can make them as spicy or as mild as you want. You can even make them vegetarian and they taste just as delicious!
Start by cooking up your chicken. I like to just throw mine on a griddle so it is easy to shred. If you don’t have the time to cook chicken you can grab a rotisserie chicken and just shred that. If you are vegetarian you can chop up and grill some peppers and onions.
Now in a pot melt your cream cheese and salsa. This is where you can make it spicy or mild. For spicy enchiladas, I like to use a spicy salsa and add a little hot sauce. For mild enchiladas, I keep out the hot sauce and use a mild salsa. I also add a little more cream cheese to tone down the heat.
After the cream cheese and salsa have melted, and combined add your chicken or veggies. Stir until they are well combined and remove from heat.
Spread about 1/4 cup of the mixture down the middle of the tortilla and fold lengthwise. I sometimes do a little less than 1/4 cup because I want a lot of the leftover to drown the enchiladas in.
Now that you have rolled and placed all the tortillas in a pan take whatever mixture you have left over and drizzle over the tortillas.
Sprinkle with shredded cheese and pop them in the oven at 350 degrees for about 15 minutes. We like ours a little crispy so we keep them in closer to 20 minutes.
