After being sick all this week, all I want is soup, soup, and more soup. Lucky for me my mom and mother in law have armed me with an arsenal of soup recipes.
We love making soup for Halloween night, but we also love making soup all fall long and clear into spring. From healthy vegetable soups to heavy cream-based soups I will have you covered. Starting off with one of my favorites creamy potato soup.
Creamy Potato Soup with Siracha
Siracha is a new obsession for me. I used to be a huge baby when it came to spicey anything. Now I drench everything in siracha. My mother in law has an amazing creamy potato soup recipe that I love to make with Siracha.
- 4 Large Potatoes, peeled and diced
- 2 Carrots Grated
- 1 Cup Diced Onions
- 3 Cups Water
- 1 Cup Milk
- 4 oz Cream Cheese or Velveeta
- 1 Bag of Country Gravy Mix
- 1 tsp Parsley Flakes
- 1/2 Cup Shredded Cheese
- Combine water, potatoes, carrots and onion in a large pot.
- Bring to boil then simmer 15 minutes.
- Add parsely and cheese stirring until cheese is melted.
- Add milk and gravy mix, stir with wire whisk until all lumps are gone.
- Cook over low heat or in your crock pot for 2 to 3 hours.
- Top with shredded cheese just before serving.
Wisconsin Cauliflower Soup
I first had this soup at Zupa’s and fell in love. At the steep price, they charge I hit up Pinterest for a copycat recipe and found one that tastes the exact same as the Zupas recipe. We love this with a hot fresh baked garlic bread.
This is such an easy recipe to put into a crock and let simmer all day. A bunch of veggies and delicious spices combined into a flavorful chili.
-4 cloves Garlic
-1 (4 ounce) can Green chiles
-2 (15 ounce) cans Kidney beans, dark red
-1 (15 ounce) can Kidney beans, light red
-1 Red or yellow onion, medium
-2 (14 ounce) cans Tomatoes
-4 cups Vegetable stock
-1 Chipotle chili in adobo sauce
-1/2 tsp Black pepper
-2 tbsp Chili powder
-1 tsp Salt
-1 tsp Sugar
-2 (15 ounce) cans Tomato sauce
-Â 1 tbsp Cumin, ground
Cream of Broccoli Soup
I hate broccoli, but I can handle it when prepared in this delicious soup. It’s creamy and tastes delicious on a cold fall night.
This is a great soup for a busy mom, with picky kids. This soup tastes like a delicious blended taco. We love pouring ours over tortilla chips and a dollop of sour cream or plain greek yogurt on top. Add a little shredded cheese and you have a delicious soup that will make a delicious dinner for the family.
